BURGER BUNS makes 8 buns · total 1h 26m · tested A highly enriched, ultra-soft burger bun dough mapped directly to your Panasonic SD-YD250 dough setting. It yields 8 massive, structurally sound buns weighing 151.5g each. INGREDIENTS -- Machine -- 330 g milk (lukewarm) 55 g butter (softened; cut into pats) 50 g egg (beaten; approx 1 large egg) 40 g sour cream 600 g bread flour 45 g sugar 45 g instant potato flakes 25 g nonfat dry milk powder 12 g salt 1 g MSG (flavor enhancer) 9 g instant yeast (in the yeast dispenser) -- Topping -- 50 g egg (beaten; for egg wash (1 egg + splash of water)) 10 g sesame seeds STEPS Machine Cycle 1. Add the wet ingredients (milk, butter, egg, sour cream) into the Panasonic bread pan. 2. Layer the dry ingredients (bread flour, sugar, potato flakes, dry milk powder, salt, MSG) on top of the liquids. 3. Place the instant yeast into the machine's dedicated yeast dispenser on the lid. 4. Select the Dough setting on the control panel and press start. 5. When the machine beeps that the dough cycle is complete, turn the dough out onto a work surface. Divide & Shape 1. Punch down the dough. The total dough weight should be approximately 1,212 grams. 2. Divide the dough into exactly 8 equal pieces weighing 151.5 grams each. 3. Form each piece into a tight, smooth ball. 4. Place 4 dough balls into each of your two greased or parchment- lined 9x13 pans. 5. Dimple: Using your fingertips, gently press down and dimple the top of each dough ball to flatten it out. This ensures they bake into wide burger buns rather than tall dinner rolls. 6. Cover the pans loosely and let rise for 45–60 minutes until very puffy. Wash & Bake 1. Preheat oven to 375°F (190°C). 2. Gently brush the tops of the proofed buns with the egg wash. 3. Sprinkle generously with sesame seeds. 4. Bake at 375°F for about 16 minutes, or until the tops are deeply golden brown. 5. Transfer immediately to a wire rack to cool completely before slicing.
